This Berliner Weisse was aged in Burgundian Chardonnay barrels for 10 months with a single strain of Brettanomyces. It was then refermented with heather honey from our friends at Edinburgh Honey Co.

The result is a sour beer with floral honey, citrus and supporting funk.
